I think this is quite common. as the Nal takes effect, we start to taste things for what they are, rather than what they are, tinged with the anticipated pleasure they're going to give - ie drunkeness
the flavour of a lot of alcoholic drinks tends to be an acquired taste - dry wine, bitter beer, etc. - probably a taste we wouldn't bother to acquire without the incentive of them containing AL!
I suspect that your brain will learn to taste Guiness for what it it - rather a bitter drink - before too long, as it seems to have done with Murphy's already, so make the most of it whilst you can

on the plus side, it's a strong sign that Nal is working for you
